IT'S PANCAKE DAY! WHY NOT TRY AN OLD SCHOOL CREPE SUZETTE
Caramel, Orange and Brandy Sauce
4 tbsp of Caster Sugar
1 Zest and Juice of an Orange
2 tbsp of Just a Splash of Brandy
Orange segments from ½ an orange
In a small frying pan or saucepan heat the caster sugar on a medium heat until the sugar has melted and starting to brown. Add the butter and stir in. Keep on the heat and add the Just A Splash of brandy followed by the zest and juice of the orange.
Optional extra of adding orange segments to the sauce for a tangy hit. Pour or smother the caramel sauce over your pancakes.
