SERVE THIS! NOTHING SAYS WIMBLEDON LIKE A STRAWBERRY FOOL!
200g hulled strawberries
5 tbsps of icing sugar
250ml double cream
1 tbsp of vanilla paste
2 tbsp of Just A Splash Sherry
In a blender add the strawberries, lemon and icing sugar and blitz unitl smooth.
With an electric whisk, whisk the double cream and vanilla paste until you have stiff peaks.
Gentle whisk in the blitzed strawberries and Just A Splash Sherry into the whisked cream, if its getting too runny hold back the strawberries as this can be used to drizzle on top for decoration. Set in the fridge for a couple of hours to set. Serve it up with some fresh strawberries, shortbread or a biscuit of your liking and enjoy!
