SPRUCED UP SPROUTS! WITH BRANDY, BACON, PECANS AND POMEGRANATES
800g sprouts, cut in half
6 rashers of bacon, cut into small strips
3 tbsp of Just A Splash Brandy
2 tsps of white wine vinegar
a knob of butter
salt and pepper
handful of pecans, roughly chopped
handful of pomegranate seeds
Blanch the sprouts in salted boiling water for about a minute until they turn bright green, drain and run under cold water.
In a dry frying pan add the bacon and fry gently until the bacon is completely golden and crispy, remove and drain onto kitchen roll. In the same pan but reserving the bacon fat add the sprouts cut side down and let them cook on a medium heat to brown and take on the bacon flavour.
Once browned add the brandy and let sizzle, followed by the vinegar, butter and salt and pepper. Give a quick toss and finish with the chopped pecans and pomegranate seeds and serve.
